Quinoa, Lentil and Peas Salad with Tahini Dressing

Serves 2

INGREDIENTS


45g quinoa
80g cooked brown lentils (or 20g uncooked lentils)
100g peas, frozen or fresh
40g pomegranate seeds
andful of green leaves such as spinach or iceberg

Dressing:
3tbs tahini sauce
2tbs chopped parsley
1 small garlic clove, crushed
1tbs lemon juice
salt and pepper to taste

 


HOW TO PREPARE
 Place the quinoa in a saucepan and cover with about 400-500ml cold water. Season with salt. Cook for 12-15 minutes or until the grains have popped up. Drain and fluff up, leave to cool.
 Dilute the tahini sauce to a honey consistency and mix with parsley, garlic and lemon juice.
 Toss all salad ingredients together and drizzle with the dressing.
